I guess now you’re wondering why this specific recipe, most pancake recipes I found Most homemade pancake recipes call for buttermilk, and honestly, who keeps buttermilk on hand? Not me. I’m also not about to have a morning science experiment making it by mixing vinegar and milk together. What I love about this recipe is that it uses regular pantry staples. Flour, sugar, baking powder, milk, eggs, and butter are things I always have, which makes this a no-stress recipe to pull together on a weekend morning.
For me, this is where I want to break the stigma that home cooking has to be complicated. Don’t get me wrong it’s a lot easier to just use box mix if you have it, especially as a busy mom. Something about cooking from scratch makes me happy? I can't explain it but this recipe shows that you can cook from scratch and still keep it simple. I think people don’t realize how easy it really is.

So next time you’re trying to figure out what to make for yourself or the kids for breakfast, check your pantry first. Sometimes homemade sounds harder than it actually is.
Mix together the dry ingredients, add in the wet ingredients, and just like that you have pancake batter. The best part is how customizable they are. Throw in chocolate chips, fresh fruit, or whatever sounds good that morning. I added apple butter into the batter once and it was genuinely incredible. I also love using frozen blueberries or making a quick fruit compote for the top if I want breakfast to feel a little extra cozy. Honestly, the options are endless once you realize how simple the base recipe is.
I think recipes like this are such a good reminder that cooking from scratch does not always have to mean complicated or time consuming. Sometimes it is just a few basic ingredients, a warm pan, and twenty quiet minutes in the kitchen before the chaos of the day starts. And honestly, those are usually the breakfasts that end up feeling the most special.
