What We’re Eating This Week: Dinner Ideas + Recipes

If there’s one thing that keeps our week running smoothly, it’s having a plan for dinner. Every Sunday I sit down and decide what we’re eating, and on Monday I grocery shop while my nanny is here so everything is ready going into the week.

I wouldn’t say these meals are always the easiest, but they bring variety into our week and keep things from feeling repetitive.

How I Plan My Week of Meals

I usually pick meals that overlap in ingredients so I can shop smarter and use everything I buy. If I’m getting fresh herbs, a protein, or a specific vegetable, I’ll plan at least two meals around it. It keeps things efficient but still gives us variety throughout the week.

So what’s on the menu?

Creamy Sausage Orzo

This one made the list mostly because I had leftover kielbasa from last week and wanted to use it up in a way that still felt like a new meal. It’s also a guaranteed win in our house. My husband and son both love sausage, and even though my husband isn’t the biggest pasta person, he’s always down for orzo. It’s one of those meals that feels filling and satisfying without being complicated, and the fact that it all comes together in one pan makes it even better. Minimal cleanup is always a priority.

Steak Mediterranean Bowl

This is my balance meal for the week. After a couple heavier dinners, I always want something that feels a little fresher but still filling. I love meals like this because they don’t feel repetitive even though they use a lot of the same ingredients I already have on hand. The homemade tzatziki makes it feel a little more elevated, but it’s still simple enough to throw together without overthinking it.

I also like making my own Taziki sauce, I dont think people realize how easy it is. This recipe already calls for most of the ingredients in it so it’s a no brainer and saves you some money when shopping at the store.

Pesto Chicken Bake with Pasta

This was a bit of a Pinterest find this week. I was looking for something that felt on the healthier side but still really good, and this checked both. I used store bought pesto, which I love because one jar goes a long way. I can use it for the chicken and the pasta while still having leftovers, so nothing goes to waste. And honestly, the mozzarella on top is what sold me. I’ve never made this before, but it feels like a safe meal that still has enough flavor to make it interesting.

Bacon Cheeseburger Sliders

This is definitely the fun meal of the week. I’m using ground beef so it’s almost like a cheeseburger meets sloppy joe situation, and I’m caramelizing onions to take it up a notch. Nothing too complicated, just enough to make it feel a little extra. I’ll probably throw a bag of frozen fries in the oven to keep it easy. This is one of those dinners I already know everyone will love, and for my son I’ll most likely deconstruct it and serve everything separately to make it more fun and easier for him to eat.

Stuffed Cabbage

This is the wildcard of the week. I’ve never made or had stuffed cabbage before, but the recipe reminded me a lot of stuffed bell peppers, which we make pretty often, so it felt like a good way to switch things up. It seems a little lighter, which I like, but still really comforting. I’m excited to try something new with this one and see if it ends up becoming part of the regular rotation.

This is what we’re eating this week and honestly, having this mapped out makes such a difference going into each day. It takes the pressure off and gives me a starting point, which is really all I need most nights. I have the menu set out and we decide what sounds best on that night, it gives us options but also feels organized!
